Slice the aubergine lengthwise and scoop out the flesh. Chop the courgette and grate the carrot.
In a frying pan, sauté the aubergine, the courgette and the carrot. Sauté the onion and the tomato, adding the herbs.
Mince all the ingredients, along with the boiled egg. Fill the aubergine skins with the mixture and pour over the white sauce.
