Mahón-Menorca Cheese Sponge with Berries

We will need:

  • 100 g Mahón-Menorca cheese
  • 2 eggs
  • 1 natural yoghurt
  • 55 g olive oil 
  • 110 g flour
  • ½ sachet baking powder
  • 50 g sugar
  • ¼ bag berries

Beat the egg whites until stiff and set aside.

In a bowl, beat the yolks with the sugar, the oil, the yoghurt and the Mahón-Menorca cheese cut into cubes.

Add the flour mixed with the baking powder using a sieve and stir with a spatula. Fold in the egg whites in gentle, circular movements.

Pour the mixture into a mould and bake in a preheated oven at 180ºC for 40 minutes until a skewer comes out clean.

Put the berries, sugar and half a glass of water in a saucepan, heat to reduce and strain using a fine sieve.

Pour the berry coulis over the pieces of sponge.
