Mahón-Menorca Cheese Tortillas


Mahón-Menorca Cheese Tortillas

We will need:

  • 250 g semi-hard Mahón-Menorca cheese
  • 250 g hard Mahón-Menorca cheese
  • 8 corn tortillas
  • 1 onion
  • 1 carton whipping cream
  • 4 tomatoes
  • 4 tbsp. extra virgin olive oil
  • Pinch of salt

Put the tortilla on a griddle pan and fill half with Mahón-Menorca cheese, mixing the semi-hard and the hard cheese. When folding the tortilla, it should be half full.

Place over a medium heat until the cheese melts, making sure the tortilla does not burn.

Cream sauce: Pour the carton of cream into a bowl and whip.

Tomato sauce: Put the tomatoes, quartered onion and olive oil in a blender. Blend until smooth and dress the tortillas to taste.
