Dissolve the yeast in warm water.
Then add the flour, the oil and the salt; knead until the dough has become a compact mass and add more flour until it loses its stickiness.
Chop the tomatoes and garlic, add a drop of oil and a pinch of sugar, and simmer over a low heat until the tomato sauce has cooked.
Grate the Mahón-Menorca cheeses and mix in equal parts. After kneading the dough and letting it prove, covered for half an hour, shape it into rounds.
Spread the tomato sauce on the pizza dough, top with the Mahón-Menorca cheese and bake for 25-30 minutes at 180ºC.
