Wholewheat Pancakes with Mahón-Menorca Cheese Sauce

We will need:

  • 100 g semi-hard Mahón-Menorca cheese
  • 100 g wholewheat flour                 
  • 10 g sugar
  • 30 g sunflower oil                          
  • 1 tsp. cinnamon
  • 200 ml fresh cream                       
  • 100 g ham
  • 150 g pumpkin                              
  • 100 ml milk
  • 5 g baking powder
  • 1 egg
  • Salt

For the pancake batter:

Mix the egg with the sugar, a pinch of salt, one teaspoon of cinnamon, the sunflower oil and the milk.

In another bowl, mix the flour with the baking powder. Add the liquid mixture to the flour and mix

thoroughly to a smooth consistency.

Heat a frying pan and cook the pancakes on both sides.


For the cheese sauce:

Heat the cream and the Mahón-Menorca cheese over a bain-marie until it has melted.

To finish, roast the ham in the oven until crisp. Slice the pumpkin thinly and cook the slices on a griddle pan.

Serve by assembling a millefeuille with the pancakes, the pumpkin, the ham and the Mahón-Menorca cheese sauce.
